Cuisine from the Collections at Academy of Natural Sciences

Just in time for Halloween, Drexel’s Academy of Natural Sciences teamed up with Culinary Arts chefs to bring guests a cocktail party filled with creepy-crawly edible delights. Chefs Edward Bottone, Charles Ziccardi, Adrienne Hall, and Donna Maguireincorporated elements from the Academy’s collections into their recipes. Culinary Students Team Up With California Raisins

From Oct. 7-9, the Food and Nutrition Conference & Expo (FNCE) 2012, sponsored by the Academy of Nutrition and Dietetics, set up at the Pennsylvania Convention Center in Center City Philadelphia. Drexel’s Culinary Arts program was there to help promote the California Raisin Marketing Board (CRMB) at their booth. Chef Adrienne Hall developed a salad recipe (including raisins) that students David Klein, Becca Smith, Emily Rugh, and Erika Ellefsen prepared on-site and served to convention guests.

Ancient Grains Challenge Comes to Bistro Kitchen

Local dieticians gathered at the Academic Bistro for Ancient Grains, an event initated by the National Foundation for Celiac Awareness (NFCA). The dieticians broke out into teams to prepare dishes from a mystery basket of ingredients. Chef Richard Coppedge Jr., certified master baker, author, and instructor of baking and pastry arts at the Culinary Institute of America, was also at the event performing gluten-free baking demos. The event aimed to showcase how easy it is for people affected by celiac disease to maintain a gluten-free lifestyle.
